The Turbofan® proofer cabinet and holding cabinet has a capacity for 12 full-size sheet pans with a tray spacing of 2-7/8". It features a mechanical thermostat with a temperature range of 65-185°F and humidity level control. The cabinet has an off/proof/hold mode selection and an auto water fill system. It is made of stainless steel both on the interior and exterior, with a glass door. The cabinet is equipped with 3" casters, two of which have locks. It is cETLus and NSF certified. Other mobile heated holding and proofing cabinets and food holding and warming equipment are also available. The cabinet operates on a 110-120V plug-in and has a continuous door seal. It has a width of 35 7/8" and a tray spacing of 2 7/8". The packaging is 100% recyclable and the cabinet has a full double skin construction. It can hold 12 full-size sheet pans or 24 half-size sheet pans. The cabinet has a mechanical thermostat and a 20A NEMA 5-20P cordset fitted. It also has a low velocity circulation fan system, dual halogen cabinet interior lamps, and a cabinet temperature display thermometer. The cabinet functions as both a proofer and a holding cabinet. It has a side hinged door, with the option to convert it to a right-hand hinge. The cabinet is equipped with 4 dia. 3" castors, with 2 front castors dual wheel and swivel lock, and 2 rigid rear castors. It is designed for individual use or can be installed with Turbofan E35D and E35T Convection Ovens. Optional accessories include a rear housing for flush rear installation and a 3M Cuno water filter kit.
