The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet made of stainless steel. It features a clear double panel tempered glass door, lip load slides, and has a capacity to hold 35 pans measuring 18" x 26". The cabinet is equipped with top-mounted controls for easy access and better readability. Reliability and durability are key features of the C5 9 Series, with high-quality components and robust construction ensuring a long life of worry-free use. The temperature priority feature of the controller ensures that heat generation is prioritized over humidity generation, promoting food safety. The intuitive 9 Series solid state controller provides continuous monitoring of both temperature and humidity, resulting in better food quality. The cabinet has rapid heat-up and recovery times, as well as precise humidity control, thanks to a digitally controlled dual-element ducted heating and humidity system. The cabinet is available in different configurations, sizes, and door types. It is made of stainless steel and aluminum materials. The 9 Series controller is easy to use and displays actual cabinet temperature and relative humidity. It also has a low-temp alarm and a low-water alarm for added safety. There are various options and accessories available for the cabinet, including casters, shelves, handles, control panel cover, and more. The cabinet doors are fully insulated and made of solid or clear double-pane tempered glass. The handles are polymer and there is full perimeter insulation with high-density fiberglass. The cabinet also features Santoprene gaskets, self-closing lift-off hinges, and a non-marking polymer bumper and drip trough combination. The display and controls of the cabinet show the actual cabinet temperature and relative humidity, with individual control dials for each. The cabinet is made of type 304 stainless steel or aluminum, and it has casters for easy mobility. The humidity generation system includes a closed loop controlled heating element, low water sensor, and a water reservoir. The heat generation system is thermostatically controlled with a heating element and blower motor.
