The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It features Dutch clear polycarbonate doors and a removable bottom mount control module. The thermostat can be set to temperatures up to 200°F and also has moisture control. The cabinet has fixed wire slides on 3" centers, with a capacity of either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability with high-quality components, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The Insulation Armour™ is available in Red, Blue, or Gray standard colors, with other colors available upon request. The doors can be solid insulated aluminum or clear polycarbonate, with full height cabinets offering the choice of full length or dutch-style doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories for the cabinet include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, straight plug (20 Amp or 15 Amp), and chrome universal slide pair.
The cabinet is made of High Density Polyethylene (HDPE) for insulation Armour™, with a smooth polymer drip trough and catch pan. It has high temperature, door mounted, Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, and clear doors with an extruded aluminum powder coated frame and polycarbonate window.
