The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with a capacity for holding up to 18 18" x 26" pans or 34 12" x 20" x 2-1/2" pans. It features Dutch clear polycarbonate doors and a removable bottom mount control module. The thermostat can be set up to 200°F. The cabinet is insulated with Grey Insulation Armour™, which retains heat, saves energy, and provides a cool-to-touch exterior. It is made of durable aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph power, with a wattage of 1440 and an amperage of 12. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option to choose between high wattage or low wattage models based on specific needs. Reliability and durability are built into the design, with high-quality components ensuring a long life of worry-free use. The cabinet provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
Additional features include the option to choose from Red, Blue, or Gray Insulation Armour™, as well as the choice between solid insulated aluminum or clear polycarbonate doors. The control module is removable without tools for easy cleaning and allows for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) Insulation Armour™ and features a smooth polymer drip trough with a catch pan. It has high-temperature Santoprene gaskets, molded hand holds on all four corners, and a polymer high-strength magnetic pull latch with a lever-action release. The hinges are field reversible, double hinged, and have a 180° swing with long-life nylon bearings.
