The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with pass-thru doors. It features one solid Dutch door and one glass Dutch door. The cabinet has universal wire slides and can hold up to 17 18" x 26" pans or 34 12" x 20" x 2-1/2" pans. The spacing between the slides is adjustable on 1-1/2" increments. The cabinet is made of stainless steel and has 5" casters with a polymer bumper and drip trough combination. It operates on 120v/60/1-PH and has a power rating of 1440 watts and 12 amps. It is cULus and NSF certified. The cabinet is equipped with top-mounted controls for easier access and better readability. It prioritizes heat generation over humidity generation to ensure food is held at the desired temperature. The intuitive 9 Series solid state controller provides continuous monitoring and control of temperature and humidity. It also has a low-temperature alarm and a low-water sensor for safety. The cabinet has a humidity generation system with a heating element and a water reservoir. It also has a heat generation system with a thermostatically controlled heating element and a blower motor.
