The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with pass-thru solid doors. It has universal wire slides and can hold up to 18" x 26" or 34) 12" x 20" x 2-1/2" pans. The cabinet is made of stainless steel and has 5" casters with a polymer bumper and drip trough combination. It operates on 120v/60/1-PH with 2000 watts and 16 amps. It is cULus and NSF certified.

The 9 Series controller is easy to use and displays actual cabinet temperature and relative humidity. It has a low-temp alarm and a recall & memory feature. It also has a low-water alarm that indicates when water is needed.

The cabinet doors are fully insulated and double-panel construction. The solid doors are made of stainless steel and the clear doors are made of double-pane tempered glass. The cabinet has built-in polymer handles, high-density fiberglass insulation, Santoprene gaskets, self-closing lift-off hinges, a non-marking polymer bumper and drip trough combination, chrome plated magnetic pull latches, and individual control dials for temperature and humidity.
The cabinet is made of type 304 stainless steel or aluminum and has four casters with neoprene wheels. The humidity generation system includes a closed loop controlled heating element, low water sensor, and a water reservoir. The heat generation system includes a thermostatically controlled heating element, blower motor, and ducted air system.
