The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with pass-thru doors. It features one solid door and one glass door, universal wire slides, and has a capacity for either eight 18" x 26" pans or sixteen 12" x 20" x 2-1/2" pans. The cabinet is made of stainless steel and has 5" casters with a polymer bumper and drip trough combination. It operates on 120v/60/1-ph power with 1440 watts and 12 amps. It is cULus, NSF, and ENERGY STAR® certified.

The controller has a recall and memory feature, allowing users to view settings at the touch of a button, and the settings are saved when turned off. The controller also has a low-water alarm to indicate when water is needed.
The cabinet offers various options and accessories, such as casters, shelves, handles, control panel cover, hinging options, latch options, plug options, and slide upgrades. The doors of the cabinet are fully insulated and double-panel construction, with solid doors made of stainless steel and clear doors made of tempered glass. The cabinet also features polymer handles, high-density fiberglass insulation, Santoprene gaskets, self-closing and lift-off hinges, a non-marking polymer bumper and drip trough combination, chrome plated magnetic pull latches, and individual control dials for temperature and humidity.
