The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with pass-thru doors. It features one solid Dutch door and one glass Dutch door, with lip load slides. The cabinet has a capacity of 34 18" x 26" pans, with 3" OC spacing. It is made of stainless steel and has 5" casters, a polymer bumper, and a drip trough combination. The cabinet operates on 120v/60/1-PH power, with 2000 watts and 16 amps. It is cULus and NSF certified.

The 9 Series controller is easy to use and displays actual cabinet temperature and relative humidity. It has a low-temp alarm, recall and memory functions, and a low-water alarm.
The cabinet is available in different configurations, sizes, and door types. It is made of stainless steel and aluminum materials.

The cabinet doors are fully insulated and double-pane, with solid or clear options. It has built-in polymer handles, high-density fiberglass insulation, Santoprene gaskets, self-closing and lift-off hinges, a polymer bumper and drip trough combination, chrome plated latches, and display and control dials for temperature and humidity.
The cabinet is made of type 304 stainless steel or aluminum, with 20-gauge polished exterior and 22-gauge interior. It has four casters with neoprene wheels, a humidity generation system with a heating element and water reservoir, and a heat generation system with a thermostatically controlled heating element and blower motor.
