The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile cabinet with a 3/4 height design. It features an insulated solid door with lip load slides and has a capacity to hold 27 pans measuring 18" x 26". The cabinet is made of stainless steel and comes with 5" casters, a polymer bumper, and a drip trough combination. It operates on 120v/60/1-ph power with 1440 watts and 12 amps. The cabinet is cULus, NSF, and ENERGY STAR® certified.

The 9 Series controller is easy to use and displays the actual cabinet temperature and relative humidity. It has a low-temp alarm to ensure the cabinet is operating at the desired temperature. The controller also has a recall and memory feature to view settings and save them when turned off. It includes a low-water alarm to indicate when water is needed, and the water element will not be energized when water is low.

The cabinet doors are fully insulated with solid or clear double-pane construction. The handles are built-in polymer handles, and the insulation is full perimeter, 2.5" thick, high-density fiberglass. The cabinet has high temperature, cabinet-mounted Santoprene gaskets, self-closing and lift-off hinges with long-life nylon bearings, and a non-marking polymer bumper and drip trough combination. The latches are chrome plated with a high-strength magnetic pull latch and lever-action release. The display and controls include individual control dials for temperature and humidity.
