The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile unit with a 3/4 height design. It features a clear double panel tempered glass door and universal wire slides. The cabinet has a capacity to hold either 13 pans measuring 18" x 26" or 26 pans measuring 12" x 20" x 2-1/2". The wire slides are adjustable on 1-1/2" increments. The cabinet is made of stainless steel and comes with 5" casters, a polymer bumper, and a drip trough combination. It operates on 120v/60/1-ph power with 1440 watts and 12 amps. The cabinet is cULus and NSF certified.

It also has a low water sensor and low temperature alarm for safety.
The C5 9 Series cabinet is available in different configurations, sizes, and door types. It is made of stainless steel and aluminum materials. Optional accessories include casters, shelves, handles, control panel cover, hinging options, latch options, plug options, and slide upgrades.
The cabinet doors are fully insulated with solid or clear double-pane tempered glass construction. The cabinet has built-in polymer handles, high-density fiberglass insulation, cabinet mounted Santoprene gaskets, self-closing lift-off hinges with nylon bearings, a non-marking polymer bumper and drip trough combination, and a chrome plated magnetic pull latch with lever-action release. The display and controls show the actual cabinet temperature and relative humidity, with individual control dials for each. The cabinet is made of type 304 stainless steel or aluminum, with casters for mobility. The humidity generation system includes a closed loop controlled heating element, low water sensor, and water reservoir. The heat generation system is thermostatically controlled with a heating element and blower motor.
