The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, half-height cabinet made of stainless steel. It features a clear double panel tempered glass door, lip load slides, and has a capacity to hold (17) 18" x 26" pans with 1-1/2" OC spacing. The cabinet is equipped with 5" casters, a polymer bumper, and a drip trough combination. It operates on 120v/60/1-ph power with 1440 watts and 12 amps. It is cULus, NSF, and ENERGY STAR® certified.

The 9 Series controller is easy to use and displays the actual cabinet temperature and relative humidity. It has a low-temp alarm to ensure the cabinet is operating at the desired temperature. It also has a recall and memory feature to view settings and save them when turned off. The controller has a low-water alarm to indicate when water is needed, and the water element will not be energized when water is low.
The cabinet offers various options and accessories, such as casters, shelves, handles, control panel cover, hinging options, door latches, drain hose adapter, stainless steel legs, and slide upgrades. It is available in different sizes and configurations, including full height, 3/4 height, 1/2 height, and under counter. The doors are available in solid or clear options, and they are lift-off and field reversible.
The cabinet is made of high-quality materials, including stainless steel or aluminum. It has fully insulated doors with double-panel construction or double-pane tempered glass doors. The handles are built-in polymer handles, and the insulation is 2.5" thick high-density fiberglass. The cabinet has high-temperature Santoprene gaskets, self-closing and lift-off hinges with long-life nylon bearings, and a non-marking polymer bumper.
