The top-mounted controls include an analog thermometer and a thermostat that can be set from 70°F to 200°F. The cabinet has a lip load capacity of 36 pans measuring 18" x 26" with 3" spacing. It is made of 304 stainless steel and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph power with 1440 watts and 12 amps. It is UL, CUL, and NSF certified.
