The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet can hold either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option to choose between high wattage or low wattage models based on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology of the cabinet retains heat, saves energy, and provides a cool-to-touch exterior. It is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. Full Height cabinets can have full-length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series offers various options and accessories, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation. It has a smooth polymer drip trough with a catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, and field reversible double hinged doors.
