The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and can hold up to 35 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has 5" casters, with 2 of them having brakes. It operates on 120v/60/1-ph and has a power rating of 1440 watts and 12 amps. It is cULus and NSF certified.
Some standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation armor, which is a patented insulation technology that retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets.
The cabinet comes with three modules: Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Some optional accessories for the cabinet include a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The cabinet is made of high-density polyethylene (HDPE) insulation armor and has a smooth polymer drip trough with a catch pan. It has high-temperature, door-mounted Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latches with lever-action release, and field-reversible, double-hinged, 180° swing hinges with long-life nylon bearings. The clear doors have an extruded aluminum powder-coated frame with a polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum panels. The casters have donut neoprene wheels with double ball bearings and nickel-plated axels, with two of them having brakes.
