The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with a capacity for holding up to 35 18" x 26" pans. It features a lower wattage option and Grey Insulation Armour™ for energy efficiency and a cool-to-touch exterior. The cabinet has Dutch insulated aluminum doors that can be configured as full length or dutch-style. The control module is removable for easy cleaning and future upgrades.
The cabinet comes with three slide styles for maximum holding capacity and can be powered by either high wattage or low wattage models. It is designed for reliability and durability, with high-quality components and a thermostatically controlled, forced convection system for fast heat-up and recovery.
The Insulation Armour™ is available in Red, Blue, or Gray standard colors, and the doors can be solid insulated aluminum or clear polycarbonate. The cabinet also features a smooth polymer drip trough with a catch pan, high temperature Santoprene gaskets, and molded hand holds for easy mobility.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) Insulation Armour™, with a polymer drip trough, Santoprene gaskets, and a polymer high-strength magnetic pull latch. The doors are either clear polycarbonate or fully insulated with fiberglass and aluminum. The casters have neoprene wheels and double ball bearings.
The holding modules are removable without tools and feature a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
