The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with a capacity for (18) 18" x 26" or (34) 12" x 20" x 2-1/2" pans. It features Grey Insulation Armour™ for heat retention and energy savings, as well as Dutch clear polycarbonate doors for visibility. The cabinet has a removable bottom mount control module with a thermostat that can reach up to 200°F. It is equipped with universal wire slides on 3" centers, adjustable on 1-1/2" increments. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph, with 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The cabinet also offers the option of solid insulated aluminum or clear polycarbonate doors, with full-length or dutch-style configurations. The control module is removable without tools and features an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights.
Optional accessories for the cabinet include a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options. The specifications of the cabinet include High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds, a polymer magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, and four casters with neoprene wheels. The holding modules are removable without tools and include a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
