The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and can hold up to 35 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
Some standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation armor, which retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets.
The cabinet also has three control modules available: Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Some options and accessories for the cabinet include a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) insulation armor, has a smooth polymer drip trough with a catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, and either clear polycarbonate or solid insulated aluminum doors. The casters have 5" donut neoprene wheels, double ball bearing swivel, ball bearing axel, and nickel plating, with two casters having brakes.
The holding modules are removable without tools and include a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
