The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It features a thermostat that can reach temperatures up to 200°F and has moisture control capabilities. The cabinet has a capacity of holding either (14) 18" x 26" pans or (26) 12" x 20" x 2-1/2" pans. It is made of aluminum and has Red Insulation Armour™ for insulation. The cabinet is equipped with universal wire slides that are adjustable on 1-1/2" increments and are spaced 3" apart. It has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph power and has a wattage of 2000 watts and 16.7 amps. It is cULus and NSF certified.

The cabinet also offers various options and accessories such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The specifications of the cabinet include High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, four casters with neoprene wheels, and removable holding modules with digital thermometer, recessed control dials, master on/off switch, "Power On" light, water pan, and ball bearing blower forced air system.
