The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a grey Insulation Armour™. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet has a capacity for (27) 18" x 26" pans, with lip load slides on 1-1/2" centers. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet is available in red, blue, or gray, with other colors available upon request. The doors can be solid insulated aluminum or clear polycarbonate, with full length or dutch-style options for full height cabinets. The control modules are removable without tools and feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights.
There are also various options and accessories available for the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The specifications of the cabinet include high density polyethylene (HDPE) insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear or solid doors with insulation and aluminum construction, four casters with neoprene wheels and brakes, and removable holding modules with digital thermometer, control dials, master on/off switch, "Power On" light, water pan, and ball bearing blower forced air system.
