The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a lower wattage and Grey Insulation Armour™. It features an insulated cabinet and door, a removable bottom mount control module, and a thermostat that can reach temperatures up to 200°F. The cabinet has universal wire slides on 3" centers, which are adjustable on 1-1/2" increments, and can hold up to (14) 18" x 26" or (26) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is a patented insulation technology that retains heat, saves energy, and has a cool-to-touch exterior. It is made of durable polymer construction that is dent, impact, and stain resistant. The cabinet doors are available in solid insulated aluminum or clear polycarbonate options. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
