The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a capacity of (27) 18" x 26" pans. It features a lower wattage option and Grey Insulation Armour™ for energy efficiency and a cool-to-touch exterior. The cabinet has a removable bottom mount control module with a thermostat that can reach up to 200°F. It is equipped with lip load slides on 1-1/2" centers for easy loading and unloading. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability with high-quality components, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray Insulation Armour™, and the insulation technology retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, and full height cabinets can be configured with full length or dutch-style doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, straight plugs in different amperages, and chrome universal slide pairs.
