The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a lower wattage option. It features Red Insulation Armour™ for insulation and durability. The cabinet has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. It has fixed wire slides on 3" centers, with a capacity for either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. The cabinet is equipped with 5" casters, two of which have brakes. It is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation Armour™, and the insulation technology retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, and the control module options include Holding, Moisture, and Combination Proof and Hold. The control modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are also removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
