The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and fixed wire slides on 3" centers that can hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. The cabinet is insulated and has a Blue Insulation Armour™, which provides heat retention and energy savings. It is made of durable aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power rating of 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on the specific needs of the application. The C5™ 3 Series Heated Holding & Proofing Cabinet is designed for reliability and durability, with high-quality components that ensure a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The cabinet is available in Red, Blue, or Gray standard colors, with other colors available on a promotional basis or upon request. It features the patented Insulation Armour™ technology, which retains heat, saves energy, and provides a cool-to-touch exterior. The insulation is made of high-density polyethylene (HDPE) and the cabinet is dent, impact, and stain resistant. Molded-in hand holds create vertical handles for easy mobility.
The C5™ 3 Series Heated Holding & Proofing Cabinet offers the choice of solid insulated aluminum or clear polycarbonate doors. Full Height cabinets can be configured with full length or dutch-style doors. Clear doors provide visibility of the contents without the heat loss associated with opening the door.
The cabinet comes with three control modules: Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
