The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, insulated cabinet with a clear polycarbonate door. It has a lower wattage option and features Red Insulation Armour™ for heat retention and energy savings. The cabinet has a capacity for 27 18" x 26" pans and comes with lip load slides on 1-1/2" centers. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet offers three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also comes in high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology used in the cabinet retains heat, saves energy, and keeps the exterior cool to touch. It is available in Red, Blue, or Gray colors. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. The clear doors provide visibility of the contents without losing heat.
The cabinet comes with three removable control modules: Holding, Moisture, and Combination Proof and Hold. These modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They can be removed without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories for the cabinet include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation Armour™, with a smooth polymer drip trough and catch pan. It has high temperature, door-mounted Santoprene gaskets and molded hand holds on all four corners. The latches are polymer high-strength magnetic pull latches with lever-action release. The hinges are field reversible, double hinged, with a 180° swing and long-life nylon bearings.
The clear doors have an extruded aluminum powder coated frame with a polycarbonate window.
