The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Red Insulation Armour™. It features Dutch insulated aluminum doors and a removable bottom mount control module. The thermostat can be set to temperatures up to 200°F and also has moisture control capabilities. The cabinet has universal wire slides on 3" centers, which are adjustable on 1-1/2" increments. It can hold up to (18) 18" x 26" or (34) 12" x 20" x 2-1/2" pans. The cabinet is equipped with 5" casters, two of which have brakes. It is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The Insulation Armour™ is available in Red, Blue, or Gray and provides heat retention, energy savings, and a cool-to-touch exterior. The cabinet can be configured with solid insulated aluminum or clear polycarbonate doors, with the option of full length or dutch-style doors for full height cabinets. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are also several options and accessories available for the cabinet, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation Armour™, has a smooth polymer drip trough with catch pan, high temperature door mounted Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear doors with an extruded aluminum powder coated frame and polycarbonate window, and solid doors
