The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a grey Insulation Armour™. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has three slide styles to choose from for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. There are also options for high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology retains heat, saves energy, and provides a cool-to-touch exterior. It is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. Full Height cabinets can have full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are several options and accessories available for the C5™ 3 Series, including a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation, with a smooth polymer drip trough and catch pan. It has high temperature, door mounted Santoprene gaskets, molded hand holds on all four corners, and a polymer high-strength magnetic pull latch with lever-action release
