The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with blue insulation armor™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and insulation armor™ technology that retains heat, saves energy, and provides a cool-to-touch exterior. The cabinet is available in red, blue, or gray, with other colors available upon request. The doors can be solid insulated aluminum or clear polycarbonate, with full height cabinets offering the choice of full length or dutch-style doors. The control module options include holding, moisture, and combination proof and hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories for the C5™ 3 Series Heated Holding & Proofing Cabinet include a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, straight plugs in 20 Amp or 15 Amp, and chrome universal slide pairs.
