The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and can hold up to 35 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
Some standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet is available in red, blue, or gray, and the doors can be solid insulated aluminum or clear polycarbonate.
The cabinet also has various options and accessories available, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The specifications of the cabinet include high-density polyethylene insulation Armour™, a smooth polymer drip trough with catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, four casters with neoprene wheels, and removable holding modules with digital thermometer, recessed control dials, master on/off switch, "Power On" light, water pan, and ball bearing blower forced air system.
