The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet is insulated with Blue Insulation Armour™, which is durable and provides a cool-to-touch exterior. It is also available in Red, Blue, or Gray colors. The cabinet has options for different slide styles, power options, and door types. It is reliable and durable, with high-quality components. The cabinet has a thermostatically controlled, forced convection system for fast heat-up and recovery. It is cULus and NSF certified. The cabinet also has various options and accessories available, such as a travel latch, 6" casters, small item shelf, stainless steel legs, and more. The cabinet is easy to clean and allows for future upgrades without replacing the entire body. It is made of High Density Polyethylene (HDPE) insulation armour and has a smooth polymer drip trough with a catch pan. The doors have high-temperature, door-mounted Santoprene gaskets and a polymer high-strength magnetic pull latch with a lever-action release. The hinges are field reversible, double hinged, and have long-life nylon bearings. The clear doors have an extruded aluminum frame with a polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum. The casters have neoprene wheels and double ball bearing swivels. The holding modules are removable without tools and have a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
