The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach up to 200°F. It can hold up to 17 18" x 26" pans on lip load slides. The cabinet is insulated with Grey Insulation Armour™, which retains heat and provides a cool-to-touch exterior. It has 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on specific needs. The C5™ is designed for reliability and durability, with high-quality components for a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. The clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) Insulation Armour™ and features a smooth polymer drip trough with a catch pan. It has high temperature, door-mounted Santoprene gaskets and molded hand holds on all four corners. The latches are polymer high-strength magnetic pull latches with lever-action release. The hinges are field reversible, double hinged, with a 180° swing and long-life nylon bearings.
