The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with grey Insulation Armour™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet is available with either solid insulated aluminum or clear polycarbonate doors. The clear doors provide visibility of the contents without losing heat. The cabinet also has three available control modules: Holding, Moisture, and Combination Proof and Hold. These modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) Insulation Armour™ and has a smooth polymer drip trough with a catch pan.
