The C5™ 1 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet that is non-insulated. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 190°F. The cabinet has fixed wire slides on 3" centers, which can hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is certified by cULus and NSF.

For proofing applications, there is a separate module with individual analog controls for temperature and humidity levels. The combination module allows for switching between heated holding mode and proofing mode with individual analog controls for temperature and humidity levels.
