The C5™ 1 Series Proofing Cabinet is a mobile, half-height cabinet that is non-insulated. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 120°F. The cabinet has lip load slides on 1-1/2" centers, allowing for a capacity of 17 18" x 26" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.

There are three holding modules available for the C5™ 1 Series Proofing Cabinet. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The proofing module is designed for proofing applications only and has individual analog controls for temperature and humidity levels. The holding module is for heated holding applications and has an analog temperature control and a passive humidity generation system. The combination module allows for a switch from heated holding mode to proofing mode and also has individual analog controls for temperature and humidity levels.
The C5™ 1 Series Proofing Cabinet offers various options and accessories, including a travel latch, 6" casters, a small item shelf, a rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, a perimeter bumper, a flush door latch, stainless steel universal slides, and different types of straight plugs and universal slide pairs.
The cabinet is equipped with a smooth polymer drip trough with a catch pan, high-temperature door-mounted Santoprene gaskets, polymer magnetic pull latches with lever-action release, field-reversible double hinged hinges with a 180° swing and long-life nylon bearings, and extruded aluminum powder-coated frame with a .090" polycarbonate window.
