The C5™ 1 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet designed for holding and proofing food items. It features a clear polycarbonate door, a removable bottom mount control module, and a thermostat that can reach temperatures up to 190°F. The cabinet has universal wire slides on 3" centers, which can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes, for easy mobility.
The cabinet is made of aluminum and operates on 120v/60/1-ph power with 2000 watts and 16.7 amps. It is cULus and NSF certified for safety and sanitation.

There are three holding modules available, each with an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. There is also a proofing module with individual analog controls for temperature and humidity levels.
Optional accessories for the cabinet include a travel latch, 6" casters, a small item shelf, a rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, a perimeter bumper, a flush door latch, stainless steel universal slides, and different types of straight plugs and universal slides.
The cabinet also features a smooth polymer drip trough with a catch pan, high temperature Santoprene gaskets, polymer magnetic pull latches with lever-action release, field reversible double hinged doors with long-life nylon bearings, extruded aluminum powder coated frame with a polycarbonate window, and four casters with neoprene wheels and ball bearings.
The holding modules are removable without tools and include a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
