The MicroBakery™ Half-size Oven/Staging Cabinet/Proofer is an electric commercial convection oven with a capacity of (5) 13"x18" half-sheet or 12"x20" hotel pans. It features Platinum controls and can store up to 99 programs. The oven also has a cook and hold function. The non-heated holding cabinet can hold (4) 13"x18" half-sheet or 12"x20" hotel pans. The PFMB half-size proofing cabinet has a capacity of (12) 13"x18" half-sheet or 12"x20" hotel pans and includes (5) racks. The equipment is equipped with 6" legs and casters for easy mobility.
