The MicroBakery™ Half-size Oven/Staging Cabinet/Proofer is an electric commercial convection oven with a capacity of (5) 13"x18" half-sheet or 12"x20" hotel pans. It features Accu-Plus controls and a MBSC holding cabinet with a capacity of (4) 13"x18" half-sheet or 12"x20" hotel pans. The PFMB half-size proofing cabinet has a capacity of (12) 13"x18" half-sheet or 12"x20" hotel pans and includes (5) racks. The oven has a temperature range of 150 to 450°F and solid state temperature control accurate to ± 4°F. It also has a fully enclosed oven back, a door interlock switch, and a two-speed fan with fan pulse capability. The oven is made of heavy-duty 430 Series stainless steel and has a left hinged door that is field reversible. The Accu-Plus controls include a pulse-fan switch, a HIGH-LOW speed fan switch, and a 1-hour timer with a non-stop buzzer. The Platinum Controls include Cook-n-Hold programming, computer link programming, and icon-driven, one-touch programmable controls. The proofer features all 304 stainless steel construction, a proofing temperature range of 80-150°F, and a holding temperature range of 125-150°F. It has an air circulation system for uniform proofing, a tempered glass full view-merchandising type door, and an infinite-position humidity rate control. The Microbakery Center comes with a choice of 6” swivel casters or 6” height adjustable legs and includes a staging cabinet to isolate oven heat and provide extra storage space. It is a compact bake center that provides flexibility and saves space in small kitchens.
