The FWE MTU-12P Solid Door Mobile Heated Holding Cabinet is designed to provide optimal conditions for storing food, allowing operators to adjust both temperature and humidity to maximize holding time without compromising flavor or texture. The pass-thru configuration ensures efficient handling, and the interior features universal tray slides that can be adjusted to accommodate 12"x20" or 18"x26" pans.
The humidity can be adjusted using a simple dial, ranging from moist to crisp, while the temperature can be adjusted between 90°F and 190°F in 10-degree increments. The temperature is easy to monitor with the built-in thermometer, and the control panel is conveniently located at eye-level and recessed to stay out of the way. A fan-cooled Hi-Temp blower motor distributes warm moist air throughout the cabinet, and moisture is provided by a removable stainless steel water reservoir. The temperature and humidity are controlled by separate Incoloy nickel-chromium heating elements.
The low-profile door is easy to open with a magnetic workflow handle, and the stainless steel construction ensures durability in demanding foodservice environments. The insulated door and cabinet-mounted door gasket provide an airtight seal to prevent heat from escaping. The exterior is made of 20-gauge stainless steel with a polished finish for easy cleaning, while the 22-gauge stainless steel interior features coved corners for easy cleaning. The cabinet is insulated with high-density fiberglass to retain heat and save on power usage. It is equipped with heavy-duty polyurethane casters for easy mobility.
This holding cabinet is UL listed, EPH Classified, and has IPX4 and CE certification to ensure quality, safety, and sanitation.
