In order to maintain the flavor and texture of certain dishes, it is crucial to store them at the correct temperature and humidity. The MT-1220-10 Solid Door Mobile Heated Holding Cabinet from FWE allows users to easily set and control these parameters, ensuring that food can be held for extended periods without compromising its taste and texture.
This heated cabinet features removable fixed racks with a spacing of 2-?”, capable of holding 12”x20”x2-½” pans. The temperature can be adjusted between 90° and 190°F using a dial with 10-degree increments, while the humidity is controlled by another dial ranging from moist to crisp. The controls are conveniently located at eye-level and recessed to avoid interference.
The cabinet utilizes two Incoloy nickel-chromium heating elements to control temperature and moisture separately. A 12”x20” stainless steel water reservoir is provided for adding moisture, which can be easily removed for cleaning. The warm, humid air is evenly distributed throughout the cabinet by a fan-cooled high-temperature blower motor.
Accessing the interior is made simple with the magnetic workflow handle, and the insulated stainless steel door is sealed by a cabinet mounted door gasket. The exterior of the cabinet is constructed with 20 gauge stainless steel, ensuring durability in demanding foodservice environments. The polished finish is both attractive and easy to clean. The 22 gauge stainless steel interior features coved corners for easy cleaning.
The cabinet is well-insulated with UG-26 high-density fiberglass insulation in the top, sides, bottom, and back, allowing for efficient heating and longer holding times. For portability, the cabinet is equipped with 5” maintenance-free polyurethane casters.
For safety and sanitation, this holding cabinet is UL listed and classified by UL EPH. It has also passed CE and IPX4 certification.
