This is a commercial stationary kettle with a 40-gallon capacity. It operates using direct steam and has a 2/3 jacket. It features a 2" draw-off and a perforated strainer (TPS-2). The kettle also includes a steam control valve, steam trap, swing drain, and a deck-mounted fill faucet (DMF). It has a pan support and a 316 stainless steel interior liner. The kettle is supported by a stainless steel cabinet base and has a one-piece stainless steel spring-assisted cover. It stands on 6" stainless steel legs with adjustable flanged feet.
