The pressure steamer is a direct steam steamer with 3 compartments. Each compartment has a capacity of (8) 12" x 20" x 2-1/2" deep pans. It is equipped with individual automatic timers and is designed for 5 psi direct steam. The steamer features a pressure regulating valve, cast aluminum doors, and a stainless steel frame. It also has (4) 6" adjustable legs with flanged feet and operates on 115v/60/1-ph power. Standard features of the steamer include an 8 psi compartment safety valve, 6" adjustable legs with flanged feet, a replaceable door gasket, a moisture separator for incoming steam, and a pressure gauge for compartment operating pressure. It also has a thermostatic trap that vents the cooking compartment automatically, heavy-duty cast aluminum compartment doors, and a pressure reducing valve for 12 to 50 psi steam supply pressure. The steamer is equipped with mechanical style timers with audible signals, removable compartment slide racks for easy cleaning, and interlocked steam inlet valves and exhaust valves for synchronous action. A mechanical interlock prevents unlatching the door while the compartment is pressurized. The compartment door hinges have adjustable hinge pins and self-lubricating bushings. The external enclosure, table top, and cooking compartments are made of type 430 stainless steel. Each compartment can hold eight 12" x 20" x 2-1/2" deep cafeteria pans or four 18" x 26" bun pans. Optional accessories for the steamer include an intermediate pull-out shelf, special compartment slide racks, and cafeteria pans in various depths. A second pressure reducing valve is also available for supply pressures of 50 to 120 psi. It is important to note that clean, non-toxic, uncontaminated steam is required for all "Direct Steam" steamers.
