The kettle/mixer is a direct, sweep/fold agitator with a 40-gallon working capacity. It features a 2/3 steam jacket design and a tilt-type mechanism. The variable speed control allows for precise mixing. The kettle/mixer also includes a hot and cold water faucet, a 3" butterfly draw-off valve, and an open leg base. It is constructed with stainless steel for durability.
Standard features of the kettle/mixer include a large pouring lip, a condensate valve with an insulated handle, and a safety device to prevent high-speed starts. It also has gallon markings stamped into the scraper shaft and level adjustable solid feet for floor bolting. The kettle/mixer operates on standard 208-240 volts, 60 Hz, 3 phase, 4 wire power.
The kettle/mixer is NSF and ASME approved. It comes with a factory-installed chrome-plated steam control kit and has a 50 psi steam jacket rating on 40-100 gallon models. The scraper speed control is infinitely variable from 0 to 40 rpm. The agitator and scraper are bayonet mounted for easy removal.
The kettle/mixer is equipped with a 3 horsepower hydraulic powered agitator, scraper, and bridge lift. All plumbing, electrical, and hydraulics are enclosed in stainless steel consoles. The mixer bridge is enclosed and made of 10 gauge stainless steel. The nylon blades are removable without tools and scrape the entire jacketed surface.
The tilt mechanism of the kettle/mixer is made of roller bearings and a case-hardened self-locking worm and segment gear. It has an infinitely variable ratio between the scraper and agitator, with the agitator rotating from 0 to 8 times the speed of the scraper.
Optional accessories for the kettle/mixer include covers, a pan carrier, a flow diverter, a food strainer, leg extensions, alternate draw-off valves, swing funnels, a pressure reducing valve, automatic water cooling, alternate mounting systems, power tilt (where not standard), accessories for connection to food pumps, and a water meter built into the system.
Additional options include type 316 stainless steel commercial kettle interior for high acid food products and a kettle accessory kit that includes a ladle, draw-off brush, clean-up brush, kettle whip, and kettle paddle.
