The kettle is made of Type 304 stainless steel with a #4 finish and has support legs with level adjustable feet. It has a high efficiency power burner heating system and operates on 115 volts, 60 Hz, single-phase power.
The kettle has solid state controls for temperature and low water safety, and the tilt mechanism is made of roller bearings and case hardened self-locking worm and segment gear. The steam jacket is permanently filled with treated, distilled water, eliminating the need for venting or refilling. The kettle has a fast heat-up and recovery time, with 140M BTU's on 40 gallon models and 190M BTU's on 60 gallon and larger models. The control panel includes a power on/off switch and LED indicators for heat cycle and low water warning. It also has precise temperature control with less than ± 1°C variance.
