The CVap® Holding/Proofing Cabinet is a mobile, full-size cabinet that is insulated and designed for convection holding. It can accommodate either 14 18" x 26" sheet pans, 28 13" x 18" sheet pans, or 28 12" x 20" hotel pans. Each rack has a load limit of 65 lbs (29.25 kg). The cabinet features two field reversible hinged solid doors with a magnetic door handle. It also has a membrane control panel with HACCP temperature downloads and a USB port. The cabinet uses CVap technology and has a manual water fill. Both the interior and exterior are made of stainless steel. The cabinet is CE, UL EPH ANSI/NSF4, cUL, and UL-Sanitation certified.
