The braising pan is a gas-powered appliance with a 40-gallon capacity. It has a 46" wide open base and a manual tilt feature. The pan itself is made of stainless steel and is 9" deep, with gallon markings, a pouring lip, and a removable strainer. The spring assist cover has a drip edge and a pan holder. The pan also includes a solid state control and an L faucet bracket. 

The braising pan has an electric ignition and is supported by 12" stainless steel legs with adjustable flanged feet. It has a heating capacity of 120,000 BTU and is certified by CSA Flame, CSA Star, and UL EPH Classified. 

Some of the standard features of the braising pan include a 3/4" rear gas connection, water tight controls and enclosures, and a lid that stops in place for vented cooking. It also has a combination gas valve with a built-in regulator. The appliance requires a 120/60/1 electrical power supply with 9.0 amps. 

The braising pan has solid state temperature controls that can be adjusted from 50°F to 425°F. It also has a drop-away food receiving pan support mounted under the pouring lip. The front, back, sides, and legs of the pan are made of stainless steel. 

The pan comes with a faucet mounting bracket that is non-enclosed and field reversible. The spring assist cover has a wrap-around cool-to-the-touch handle and a condensate lip. Each 12" width of the pan is equipped with a 30,000 BTU/hr. burner, and the burners shut off when the pan is tilted 5°. The pan has an electronic ignition system for automatic burner lighting. 

The pan has a manually operated anti-jam pan tilting mechanism with a removable handle. It can be fully tilted to empty completely with approximately 30 crank revolutions. The front hinged polished stainless steel pan body has coved interior corners and embossed gallon markings. The cooking surface is made of stainless steel bonded to a steel plate. The pan also has a full-width 4" return flange with a formed pouring lip and a removable strainer. 

Some optional features of the braising pan include a second year extended limited parts and labor warranty, a motor-driven pan lift with a removable manual crank handle, and different types of draw-off valves.
