The Turbofan® proofer cabinet and holding cabinet has a capacity of 10 full-size or 20 half-size pans. It features a mechanical thermostat, humidity level control, and off/proof/hold mode selection. The interior and exterior are made of stainless steel with a full-view glass door. It also has casters for easy mobility. The cabinet has a power of 1.45kW and operates on 110-120v/50/60/1-ph with 11.6 amps. It is certified by cETLus and NSF. Some of its standard features include a 110-120V plug-in, continuous door seal, mechanical thermostat, humidity level control, and 2 7/8" tray spacing. It also has a compact design with a width of 28 7/8" and a capacity of 12 full-size sheet pans or 24 half-size sheet pans. The cabinet has an off/proof/hold mode selection, low-velocity circulation fan system, and dual halogen cabinet interior lamps. It can function as both a proofer and holding cabinet. Additional accessories include a rear housing for flush rear installation and an optional water filter kit. The cabinet is designed for individual use or can be installed with Turbofan 32D Convection Ovens. It has 4 castors, with 2 front castors dual wheel and swivel lock, and 2 rigid rear castors.
