The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with pass-thru solid Dutch doors. It has universal wire slides and can hold up to 17 18" x 26" pans or 34 12" x 20" x 2-1/2" pans. The cabinet is made of stainless steel and has 5" casters with a polymer bumper and drip trough combination. It operates on 120v/60/1-PH with 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet features top-mounted controls for easier access and cleaning. It is designed for reliability and durability, with high-quality components and robust construction. The temperature priority feature ensures that the cabinet holds food at the desired temperature for food safety. The intuitive 9 Series solid state controller provides continuous monitoring and control of both temperature and humidity, resulting in better food quality. The doors of the cabinet are fully insulated and double-panel construction. The solid doors are made of stainless steel, while the clear doors are made of double-pane tempered glass. The cabinet has built-in polymer handles, high-density fiberglass insulation, cabinet-mounted Santoprene gaskets, self-closing lift-off hinges with nylon bearings, a non-marking polymer bumper and drip trough combination, and chrome-plated magnetic pull latches.
The display and controls of the cabinet show the actual cabinet temperature and relative humidity, with individual control dials for each. The cabinet is made of type 304 stainless steel or aluminum, with a polished or brushed exterior and a natural or interior. The casters have neoprene wheels and double ball bearing swivels, with two of them having brakes. The humidity generation system includes a closed loop controlled heating element, low water sensor, and a water reservoir with a drain. The heat generation system is thermostatically controlled with a heating element, blower motor, and ducted air system.
