The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet made of stainless steel. It features clear double panel tempered glass Dutch doors with lip load slides. The cabinet has a capacity to hold 34 pans measuring 18" x 26" with a spacing of 1-1/2" OC. It is equipped with 5" casters, a polymer bumper, and a drip trough combination. The cabinet operates on 120v/60/1-PH power with 1440 watts and 12 amps. It is certified by cULus and NSF.
The cabinet is designed with top-mounted controls for easy access, better readability, and to prevent damage. It prioritizes heat generation over humidity generation to ensure food is held at the desired temperature for food safety. The intuitive 9 Series solid state controller continuously monitors and controls the temperature and humidity inside the cabinet, resulting in better food quality. The C5 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is available in different configurations, sizes, and door types. It is made of high-quality stainless steel and aluminum materials. The cabinet can be a reach-in or pass-thru design, except for the under counter and 3/4 height models. The doors are lift-off and field reversible.
The 9 Series controller of the cabinet is easy to use and displays the actual cabinet temperature, humidity, and settings. It has a low-temp alarm, recall and memory function, and a low-water alarm for safety.
There are various options and accessories available for the cabinet, including casters, shelves, handles, control panel cover, different door latches, drain hose adapter, stainless steel legs, and slide upgrades.
The cabinet doors are fully insulated with solid or clear double-pane tempered glass. It has built-in polymer handles, high-density fiberglass insulation, cabinet-mounted Santoprene gaskets, self-closing and lift-off hinges, a non-marking polymer bumper and drip trough combination, chrome plated magnetic pull latch, and individual control dials for temperature and humidity.
The cabinet is made of Type 304 stainless steel or aluminum with a polished or brushed exterior and a natural or interior. It is equipped with casters with neoprene wheels and a humidity generation system
