The top-mounted controls include an analog thermometer and a thermostat that allows for temperature adjustment from 70°F to 200°F. The cabinet has universal wire slides that can hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans, with a capacity of 18 or 34 pans, respectively. The cabinet is made of 304 stainless steel and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph power with 1440 watts and 12 amps. It is UL, CUL, and NSF certified.
