The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Red Insulation Armour™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F and also has moisture control. The cabinet has lip load slides on 1-1/2" centers, with a capacity to hold 35 pans measuring 18" x 26". It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is a patented technology that retains heat, saves energy, and has a cool-to-touch exterior. The cabinet is available with either solid insulated aluminum or clear polycarbonate doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, straight plugs in different amperages, and chrome universal slide pairs.
