The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with grey Insulation Armour™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F and also has moisture control. The cabinet has fixed wire slides on 3" centers, with a capacity of either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet is available with either solid insulated aluminum doors or clear polycarbonate doors. Full height cabinets can be configured with full length or dutch-style doors. The clear doors provide visibility of the contents without losing heat.
The cabinet comes with three modules: Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
